Hotel Champlain and Heirloom Hospitality Announce Two New Appointments at Original Skiff Fish + Oyster

Burlington, VT — Hilton Burlington Lake Champlain, soon to be Hotel Champlain, is pleased to announce two appointments to the Original Skiff staff, Kevin Sprouse to Executive Chef and Marina Cook to General Manager. In partnership with Heirloom Hospitality, Kevin and Marina will lead the newest restaurant collaboration from local chef, Eric Warnstedt. The team is thrilled to be bringing Burlington its first seafood restaurant slated to open in early June.

Chef Kevin Sprouse brings over 20 years of experience to the team at Original Skiff Fish + Oyster, having worked throughout Vermont and Virginia. Sprouse comes from Philo Ridge Farm Chef Sprouse is a passionate and dedicated chef whose skillset includes innovative culinary strategy and skilled menu development that are at the forefront of everywhere of all his work.

Marina Cook has over 25 years of restaurant and beverage experience in her role as General Manager at Original Skiff. Cook brings front of house and back of house expertise with her. Including time as a private chef in Los Angeles, working for the NFL, cooking abroad, and developing drink menus in 5 different countries. Most recently the beverage director at Phil Ridge Farm with Chef Sprouse.

Original Skiff is designed to celebrate the love of all things seafood while staying connected to local growers, ranchers, bakers, artisans, and wild crafters. Original Skiff is intentionally playful, campy, and nostalgic. The space is thoughtfully designed, and like the brand itself, evokes feelings of quintessential oyster bars and coastal taverns from Bar Habor to the Florida Keys.
